Macarons

Ingredients: 

For the shells

  • 1 ¾ cups powdered sugar
  • 1 cup almond flour
  • 3 egg whites (room temperature)
  • ¼ cup granulated sugar
  • Pinch of salt
  • Gel food coloring (optional)

For the filling:

Buttercream, ganache, or jam of your choice.

Directions:

  • Preheat oven to 300°F (150°C). Sift almond flour and powdered sugar together. Set aside.
  • Whip egg whites with a pinch of salt until frothy.
  • Gradually add sugar and beat until stiff peaks form.
  • Add food coloring if desired.
  • Fold the dry ingredients into the meringue until the batter flows like lava.
  • Pipe small circles on a baking sheet.
  • Rest for 30-60 minutes until the tops form a skin.
  • Bake for 14-16 minutes, until firm. Cool completely.
  • Pair up shells and pipe with your favorite festive filling.
  • Refrigerate for 24 hours for the best texture. Bring macarons to room temperature before serving and enjoy!
