  • 'Gluten Free' Makai Methi Roti by Chef Tarla Dala
The methi used in combination with makai ka atta makes a delectable variation of the traditional makai ki roti. A bowl of thick curds is all that is required along with these roti to make a satisfying breakfast or a quick meal. 
 
Preparation Time: 10 mins.
 
Cooking Time: 10 mins.
 
Serves:
 
Ingredients
 
• 1 cup maize flour (makai ka atta)
• 4 tbsp chopped fenugreek (methi) leaves
• 2 tsp green chilli paste
• 2 tsp oil
• salt to taste
 
Other Ingredients
 
Corn flour (makai ka atta) rolling
 To Serve
2 tsp butter
 
Method
 
1. Mix all the ingredients together and using enough water, knead to make a soft dough.
 
2. Divide the dough into 4 equal portions.
 
3. Roll out each portion into 100 mm. (4”) diameter circles.
 
4. Cook on a hot tava on both sides.
 
5. Serve hot with a dollop of butter.
