Chicken Chukka

Ingredients


• 1.4 kg whole chicken, cut in 8 pcs

• 100 gms coconut

• 2 medium chopped tomato

• 6 cloves garlic

• 2 inch knob ginger

• 2 sliced Spanish onions

• 10 dried red chillies

• 1 tbsp oil

• 2 tbsp coriander seeds

• ½ tbsp aniseed (saunf)

• 1 tbsp cumin seeds

• 1 tbsp black pepper corns

• 3 cardamom

• 6 cloves

• 3 cinnamon

• 4 star anise

• 4 bay leaf

 

 

Preparation


• Brown the coriander seeds lightly.

• Grind one tablespoon of oil, browned coriander seeds, red chillies, rest of the spices in the ingredients list to a semi-coarse paste.

• Brown the sliced onions and chopped tomatoes. Add ginger and garlic.

• Add ground paste and dry out the moisture. When mixture is semi-dry, add chicken and curry leaves and finish it.
