Darpan News Desk, 24 Jul, 2018

The Little Curry Shop is a multi-unit, casual neighborhood restaurant known for light, simple dishes bursting with bold flavours and inspired by the south of India.

Βiju Thomas is a Denver-based chef, author, and entrepreneur, originally from Kerala in the south of India. Thomas grew up as a competitive cyclist and later transferred his love of sport into creating healthy, colourful and flavourful foods for top-end athletes.

In 2009, Chef Thomas teamed up with sports physiologist Dr. Allen Lim to improve the everyday diets and performance nutrition of professional cyclists and their teams. Their best-selling and wildly popular Feed Zone cookbook series includes The Feed Zone Cookbook, Feed Zone Portables, and The Feed Zone Table, all of which feature hundreds of easy, healthy recipes for an active lifestyle. In the years since, Thomas has cooked for dozens of elite professional athletes and celebrities, teaching them the craft of healthy everyday cooking.

In 2014, Thomas opened his first Little Curry Shop restaurant in Denver’s trendy RiNo neighborhood. The Little Curry Shop is a multi-unit, casual neighborhood restaurant known for light, simple dishes bursting with bold flavours and inspired by the south of India. Since then, he has opened more Curry Shops around Denver and plans to take the restaurants nationwide.
This summer, he is launching a range of Kerala-inspired spices and simmer sauces, which are available for direct purchase from LittleCurryShop.com, or
