Ingredients:
For the shells
1 ¾ cups powdered sugar
1 cup almond flour
3 egg whites (room temperature)
¼ cup granulated sugar
Pinch of salt
Gel food coloring (optional)
For the filling:
Buttercream, ganache, or jam of your choice.
Directions:
Preheat oven to 300°F (150°C). Sift almond flour and powdered sugar together. Set aside.
Whip egg whites with a pinch of salt until frothy.
Gradually add sugar and beat until stiff peaks form.
Add food coloring if desired.
Fold the dry ingredients into the meringue until the batter flows like lava.
Pipe small circles on a baking sheet.
Rest for 30-60 minutes until the tops form a skin.
Bake for 14-16 minutes, until firm. Cool completely.
Pair up shells and pipe with your favorite festive filling.
Refrigerate for 24 hours for the best texture. Bring macarons to room temperature before serving and enjoy!
