Outstanding in the Field is the world’s first pop-up restaurant series in a farm field. A radical intervention to the stale dining conventions, at each dinner, guests are seated at a picturesque alfresco long table and feast on dishes served from ingredients sourced from the feature farm. Each dinner becomes a place and time where the farmer’s story is celebrated and recognized.
Farm-to-table dining has become so huge in BC - whether through cooking at home, eating out at local restaurants or culinary event pop-ups. Outstanding in the Field is the perfect example of the increasing number of unique farm-to-table dining experiences within the region. Savio Volpe is just one of a few local restaurants to partner on an upcoming Outstanding in the Field dinner this year.
Zaklan Farm was started in the 1920s by Marta and Dragan Zaklan. What’s now an urban farm was once an unknown, isolated wilderness when the couple moved from the city to the country. Marta’s youngest son George, now in his 80s, still lives and works on the farm, which is home to eight organic acres of diverse vegetable and fruit production, pastured livestock and 95 laying hens. Gemma and Doug met and farmed at Vancouver’s UBC Farm (site of our first Outstanding table in Canada in 2005), and are now in their fifth year farming together at Zaklan.
About Mark Perrier
Chef Mark earned his stripes in some of Vancouver’s top restaurants, including David Hawksworth’s West Restaurant and CinCin, and also worked abroad at the two Michelin-starred, Le Gavroche in London. Mark Perrier brings over a dozen years of culinary experience to the table as chef and co-proprietor of Osteria Savio Volpe. Since his very first day in a professional kitchen, Perrier has always been working towards the dream of running the kitchen in his own restaurant. Osteria Savio Volpe is the fruition of that dream.
About Savio Volpe
Firmly rooted in the Italian tradition of simplicity and freshness, Osteria Savio Volpe’s menu features plenty of fresh, handmade pastas; heavy use of the wood fire grill and spit; and a rotating selection of homemade and artisanal cookies, pastries and gelato. Never fussy, complicated or challenging; always tasty. Inevitably, Osteria Savio Volpe’s version of Italian is flavoured by as much of what is grown and sourced right here in the lower mainland and its environs: this is Vancouver Italian. The all-Italian wine list is accessible and fun without being shy to explore a less predictable region or varietal from time to time.
